As the 2026 Hilton Chef Season is in full swing, Hilton Beijing once again leads Beijing’s culinary scene with craftsmanship and creativity. A distinctive "Four-Hand Collaboration" event was successfully held at Baba Kitchen on the hotel’s second floor.
Li Dong, Executive Chef of Hilton Beijing, and Chen Miaochuan, Head Chef of Tang Palace (Hilton Branch), took the stage together. Under the theme of One Feast, Two Rhythms: Harmony of Lingnan and Nanyang Flavours, they staged a wonderful dialogue between Nanyang-Beijing flavours and Lingnan culinary craftsmanship at a single banquet, treating guests to a cross-regional gastronomic journey.

One Table, Two Tastes · Echoes of Lingnan

“Nan” embodies the Nanyang-Beijing flavours of Baba Kitchen, while “Yue” represents the Lingnan culinary mastery of Tang Palace’s head chef. Centered on the spirit of terroir, the event brings together two chefs trained in distinct culinary traditions, yet both share a focus on the quality and stories behind every ingredient.

Baba Kitchen weaves rich Southeast Asian aromatics into classic Beijing flavours. Tang Palace, meanwhile, showcases refined Cantonese techniques to honour the natural essence of ingredients and uphold the culinary philosophy of “eating only what is in season”.

Like harmonious strings of a qin and se, the two culinary styles intertwine throughout the feast, striking brilliant, unexpected flavour sparks.

The dinner menu unfolds like a collection of flavour tales. Every dish marks a leg of the journey, where vibrant Nanyang aromas and mellow Lingnan freshness intertwine and linger on the palate.

Starter | Shredded Beijing Chicken
Hilton Beijing’s culinary team selects premium Qingyuan chicken. Prepared following the ancient method of repeated blanching and soaking, the chicken is chilled in ice water to tighten the skin, then hand-shredded. Served with a numbing, rich chilli oil sauce, it kicks off the feast with distinct Beijing charm — crisp skin, tender meat and mellow fat without greasiness.

Soup | Double-Boiled Sea Whelk with Golden Orchid and Fish Maw
A masterful showcase of Cantonese culinary skill. Each portion undergoes five hours of slow double-boiling to draw out all essences into the broth. The gentle freshness of golden orchid, collagen-rich fish maw and sweet sea whelk complement one another perfectly, crafting a nourishing Lingnan delicacy with soothing flavours.

Main Course | Grilled Salmon with Sambal Sauce
Thick-cut salmon is roasted at graduated temperatures, boasting caramelised crust and tender pink flesh. Coated with vibrant Nanyang sauce blended from sambal chilli paste, coconut milk and honey, it delivers a bright, sweet-spicy flavour full of passion.

Pan-Fried Wild Yunnan Mushrooms in Typhoon Shelter Style
Featuring edible-and-medicinal white bolete mushrooms. Wok-fried with Tang Palace’s signature golden garlic in classic Typhoon Shelter preparation, the mushrooms are crisp outside and succulent inside with multi-layered flavours, demonstrating the chef’s consummate craftsmanship.

Staple | Malaysian Laksa

It elevates Nanyang charm to its climax. More than a dozen spices are slow-sautéed and simmered in rich coconut milk, paired with seasonal fresh vegetables from Beijing. Every bite unfolds a multi-layered gastronomic feast.

Dessert | Stellar Milk Pudding

The dessert course is crafted with ingenuity. The Stellar Milk Pudding delivers a refreshing, soothing taste, while the Mushroom Swan Puff charms with its crisp texture and elegant shape. Nanyang flair and Cantonese refinement blend seamlessly to conclude the feast, encapsulating two distinctive terroirs within a single dining experience.

Two Chefs, One Feast · Savour This Summer

The event was hosted at Baba Kitchen, enveloped in authentic Nanyang ambience. While savouring the cuisine, guests enjoyed close interactions with the two chefs. Chef Li Dong shared his philosophy of spice balancing in Baba-Nyonya dishes, and Chef Chen Miaochuan elaborated on the traditions of Cantonese cuisine and his rigorous pursuit of premium ingredients.

Coinciding with the Chef Season, Baba Kitchen has launched a special Chef Season buffet. Signature dishes from this Four-Hand Collaboration – Shredded Beijing Chicken, Grilled Salmon with Sambal Sauce and Malaysian Laksa – will all be featured. The spread is complemented by seafood including crayfish, freshly carved salmon and prawns, alongside hot dishes from the grill station, offering over a hundred varieties for guests to enjoy freely.

Tang Palace Cantonese Seafood has launched the Summer Seafood Festival Exclusive Set Menu for six guests (CNY 1,588 per set). Highlights include Steamed Maple Crab with Jinhua Ham and Egg White, Pearl Grouper, and Traditional Dalian Abalone, served alongside the award-winning signature squab and roasted meats. The set brings together authentic Cantonese flavours and fresh seafood, ideal for family gatherings and intimate business dinners.

11The General Manager of Hilton Beijing commented at the event: “Through this Four-Hand Collaboration, we hope guests can experience the integration of diverse cultures and the splendour bestowed by nature on their palates.
